Triangle Ranch Southwest Blackbean Soup

This hearty, quick-to-make soup combines browned ground beef and onions with black beans, cream-style corn, Rotel tomatoes, and cream cheese for a creamy, flavorful Southwest-style dish that serves 8–10.

Ingredients

  • 2 lb ground beef (browned with onion)
  • 2 15 oz. cans black beans (undrained)
  • 2 15 oz. cans cream style corn
  • 2 10 oz. cans Rotel Original Tomatoes (undrained)
  • 8 oz. Cream Cheese

Directions

  1. In one large skillet: Brown ground beef and onions. 
  1. Add all canned ingredients. 
  1. Cube and add cream cheese. 

4. Heat and stir until all blended, warm and bubbly (photo before blending/warming).
